The Basic Training is aimed at those who want to acquire the original technique of the True Neapolitan Pizza. Suitable for complete beginners, those with some experience, and entrepreneurs looking to invest in a Neapolitan pizzeria.

- → Historical background of Neapolitan pizza
- → Leavening, maturation and fermentation
- → Ingredients: water, flour, yeast, salt, tomato, mozzarella, olive oil
- → Baking techniques — wood and gas oven
28 Hours
Laboratory
Held by an expert AVPN pizzamaker in a fully equipped professional laboratory.
- → Dough preparation by hand and kneader
- → Shaping the dough-balls (staglio)
- → Pizza dough handling and topping
- → Oven ignition and baking techniques
- → Baking at different temperatures
- → Cleaning tools and kitchen management
