WHAT YOU WILL LEARN (FULL CURRICULUM)

1. THEORY — 14 Hours

You will study:

  • The historical background of Neapolitan pizza and the internal AVPN code
  • Leavening and maturation processes
  • Raw materials and the entire production chain
  • Oven structure and baking techniques

2. WORKSHOP — 28 Hours (Hands-on)

You will practice:

  • Dough preparation (by hand and machine)
  • Dough-ball molding (staglio)
  • Stretching, manipulation and topping techniques
  • Baking in wood, gas and electric ovens

3. FINAL EXAM + OFFICIAL CERTIFICATE

At the end of the course, you will take the AVPN final exam and receive an official Certificate of Attendance, recognized worldwide.
