Held by an expert AVPN pizzamaker in a fully equipped professional laboratory.

  • → Dough preparation by hand and kneader
  • → Shaping the dough-balls (staglio)
  • → Pizza dough handling and topping
  • → Oven ignition and baking techniques
  • → Baking at different temperatures
  • → Cleaning tools and kitchen management
